Usually for me, weekend mornings are spent waking up early and getting out the door to meet clients. On a rare occasion when I have a Saturday or Sunday morning free, we like to take full advantage by making a REALLY awesome brunch. Our waffle maker doesn’t get a whole lot of use, but when we do pull it out, I wish we did it more often!
I love these kinds of breakfast recipes because they’re super simple, super fast, but still healthy and satisfying. I like to top mine with some natural peanut butter for protein, and sliced banana because who doesn’t love a good peanut butter banana combo?
Prep time: 5 minutes
Cook time: 5-10 minutes
- 1 Cup whole wheat flour
- 2 tbsp white sugar
- 1 tsp baking powder
- 1/8 tsp salt
- 1 cup milk
- 1 egg
- 1 tbsp canola oil
- 1/2 tsp vanilla (optional)
*tip* If you don’t have a waffle maker this batter works well for pancakes too
Pre-heat waffle maker. Measure out dry ingredients into a bowl. Add wet ingredients and whisk it all together until there’s no lumps of flour left. Spoon onto pre-heated waffle maker. Cook according to your waffle maker’s directions (ours takes about 3 minutes per batch)
Serve with your favourite toppings, I like peanut butter and banana on mine, or you can try other fruits, syrup, or jam.
